Cheeseburger Casserole, Baked Spaghetti and Chocolate Shortbread Bars

Cheeseburger Casserole

1 lb lean ground beef

1/2 cup sharp cheddar cheese

1 can cream of mushroom soup

1 can cream of celery soup

1/2 onion (chopped)

1 green pepper (sliced thin)

1 cup sliced mushrooms

Olive oil

2 cups cooked and drained elbow macaroni

Salt and pepper

 

Sauté onions, green peppers and mushrooms in a small amount of olive oil until onions are transparent. Add ground beef and sauté until well done. Add soups and mix well. Heat through. Add drained, cooked macaroni and mix well. Place in casserole dish and sprinkle cheese on top. Bake at 350° until cheese is melted.

 

Baked Spaghetti

1 lb ground beef

1 small onion (chopped)

1 cup chopped mushrooms

1 bell pepper (chopped)

Olive oil

1 16 oz. jar of your favorite spaghetti sauce

1 can cream of mushroom soup

1 cup mozzarella cheese

16 oz. spaghetti (cooked and drained)

 

Sauté onions, green peppers and mushrooms in a small amount of olive oil until onions are transparent. Add ground beef and sauté until well done. Mix in spaghetti sauce and mushroom soup and heat through. Mix drained spaghetti and mix well. Pour into casserole, and top with mozzarella cheese. Bake at 350° for about 30 minutes or until cheese begins to brown.

 

Chocolate Shortbread Bars

1/3 cup melted butter

1 1/2 cup shortbread cookie crumbs

1 cup chopped pecans

1 cup semi-sweet chocolate morsels

1 cup angel flake coconut

1 can condensed milk

 

Melt butter in 13x9" pan. Spread cookie crumbs evenly in bottom of pan, pressing gently. Sprinkle chopped pecans over cookie crumbs. Add chocolate morsels. Sprinkle coconut over chocolate morsels. Evenly drizzle condensed milk over the top. Bake at 350° for about 20 minutes. Cool completely, and cut into bars.
